I Like Big Burgers & I Cannot Lie: Part Three

Who remembers when I started this specific blog series way back in….dear Lord, DECEMBER?! Well…I know you’ve all been on the edge of your seats waiting for the final installment & here she is…I Like Big Burgers & I Cannot Lie: Part 3

#3 BBQ Meatloaf Burger

When Jordan told me about this recipe, I immediately responded with, “That sounds like something that’s going to sit like a rock in my stomach.” The word meatloaf & sandwich is not something I was super jazzed about but HOLY FREAKING MOSES. I was so wrong. Everything about this burger is delicious. 

Spoiler alert: Quincy helped with this recipe so I may or may not have been slightly distracted & botched one of the steps…but rest assured, it still tasted bomb.com! 

Frost Rendition:

1.5 lbs ground beef
• 2ish cups of breadcrumbs
1 egg, whisked
1 T of minced garlic
1/2 onion, diced up real nice
1 T Worcestershire sauce
1 T parsley
1 tsp salt
1/2 tsp black pepper
1 ¼ cup BBQ sauce

• Dem hamburger buns
8-12 strips of crispy bacon
French fried onions

And in case you’re looking for a good BBQ sauce, we stumbled across this one at Aldi & we’re both slightly obsessed. It’s so good that I’d be willing to eat cauliflower with it…and I really hate cauliflower (see my rant on cauliflower here)

STEP ONE – Preheat the oven 350 & line a baking sheet with foil. Easy enough right? Step two is where the real work kicks in…. (I’m joking of course, this recipe is stupid easy…but of course, I was able to mess it up 🙂


STEP TWO – Mix in all the ingredients…but here’s the important part that I missed…all of the ingredients UP TO AND INCLUDING THE BLACK PEPPER. I repeat…after the black pepper, freaking stop! Quincy’s cuteness was too overwhelming & I got distracted & poured about 1 cup of the BBQ sauce into the mix. 

STEP THREE – Stick that giant bowl of meat & fixin’s onto the baking sheet & form into a lovely meatloaf shape. If you’re not like me & haven’t used nearly ALL of your BBQ sauce, go ahead & slather that sauce all over your meatloaf/burger/goodness. Don’t use all of it though…keep a fair share for after it’s baked. 

STEP FOUR – Stick ‘er in the oven & bake for about 45-50 minutes, or until cooked through. Once you pull this sucker out, let it sit for about 10 minutes before you brush on the leftover BBQ sauce & then slice the meatloaf into some thick & juicy slices. 

STEP FIVE – Assemble your burgs. Me personally, I put a little bit of mayo & BBQ on my toasted bun, then layered on the meat slices (that sounds much less appetizing than it actually is, I swear!), bacon slices & topped it off with the french fried onions. 

Bonus points – this recipe makes freakin’ scrumptious leftovers! 

I am feeling awfully hopeful about our future cooking adventures just based on the risks we’ve taken this past year. Not only do we get to gobble up some freaking tasty food, but we’ve really come to enjoy trying out new recipes & cooking together!
